This week Monday 167..8
standard breakfast 1 C. green beans 1 whole egg + 1 white poached 8:30 am 125
jello with coolwhip and manderin oranges 75
tomato soup boca burger 300
crab bites, pesto, sour cream over 1 C. spaghetti squash 250
1/2 faux mashed potato ( equal parts cauliflower and white beans mashed together)
with sour cream and 1/2 oz sharp chedder 4:30 200
Tues 167.8 ( splurge day)
egg / beans 125
1 C green soup 100
( 1 can turnip greens celery onion garlic italian seasoning !/4 lemon with peel in blender to very fine cook in 3 C chic broth about 15 minutes )
5 oz chic breast stuffed w/ garlic spinach and goat cheese 300
1/3 canteloupe 75
Dinner out out back at very least 1000 calories
Club 9
A place to connect friends and family.... following a food plan consisting of 9 fruits and veggies per day ....to support each other ......exchange recipes and be accountable.

Another experiment w/ eggplant.
Eggplant casserole
3 large portions
in 8 in casserole dish spray or brush with evoo ( extra virgin olive oil)
Layer......
2 Cups el dente pasta of your choice ( I used whole wheat penne)
4 oz shredded mozerella cheese
Small eggplant sliced about 1 inch thick or more and broiled lightly ( just so it browns a little but not mushy)
pour over all 1 1/2 C or 1 jar spicy pasta sauce ( I used frozen tomatoes from my garden, garlic, onion, sauteed in olive oil, red pepper flakes and wine)
cover with a generous amount of parmesan or grated asiago cheese bake 350 degrees 20 minutes or until bubbly
should be 2 v ...small salad would add 2 more
This would be a good "make ahead" dish just warm a little in microwave and finish in oven
I like it because it limits the pasta portion to 2/3 Cup. Impossible for me when faced with a nice bowl of pasta LOL
Adding some nice Italian sausage to the sauce would probably work too. Hmmmmmm

D Pan fried Tilapia, baked sweet potato ( plain),1 C roasted veggies (Zucchini,red and green bell pepper onion ,carrot,celery) steamed broccoli w/ parmesan 3v
Supper 1/4 lb boiled peel and eat shrimp, 1 1/2 C salad Green goddess dressing 3v
S. greek yogurt w/ 1 tsp chocolate powder from sf/ff instant pudding
20 min walk inside
