I Love Chicken!

Today I tried two new recipes,
  • -Bella Chicken with Brandy Sauce
  • -Dijon Roasted Cauliflower with Onions
The chicken tasted really good, I just wish I cooked the cauliflower a little earlier since the chicken was getting cool, while the cauliflower was really hot!

Another experiment w/ eggplant.

Eggplant casserole
3 large portions
in 8 in casserole dish spray or brush with evoo ( extra virgin olive oil)
 Layer......
2 Cups el dente  pasta of your choice   ( I  used whole wheat penne)
4 oz  shredded  mozerella cheese
Small eggplant sliced about 1 inch  thick or more and broiled lightly ( just so it browns a little but not mushy)
   pour over all   1 1/2 C or 1 jar spicy pasta sauce  ( I used  frozen tomatoes  from my garden, garlic, onion, sauteed in  olive oil, red pepper flakes  and wine)
cover with a generous amount of parmesan or grated asiago cheese bake  350 degrees 20 minutes  or until bubbly
should be 2 v ...small salad would add 2  more  
This would be a good "make ahead" dish  just warm a little in microwave and finish in oven
I like it because it limits the pasta portion to 2/3 Cup.  Impossible for me when faced with  a nice bowl of pasta  LOL
Adding some nice  Italian sausage to the sauce would probably work  too.  Hmmmmmm

Weight Loss Program

We are starting a Weight Loss Program at work next week. I will pass on any interesting info that I get.

I am sticking to the 9 fruit/veggies plan, and I am feeling full of energy! Get up the good work!

Tues Menu

No pics :)

B.  egg/beans  2v
S.  'taco' lettuce wrap 1v
D  Pan fried Tilapia, baked sweet potato ( plain),1 C roasted veggies (Zucchini,red and green bell pepper onion ,carrot,celery) steamed broccoli w/ parmesan   3v
Supper   1/4 lb  boiled peel and eat shrimp,  1 1/2 C salad Green goddess dressing 3v
S.  greek yogurt w/ 1 tsp  chocolate powder from sf/ff  instant pudding
20 min walk inside
20 min yoga

The Beginning!

This is my first day of actually being in the 9 club! I found it difficult, but ended up not eating any types of bread at all!

My Day:
-I had a V8 before morning workouts at 6am
<---After I ate strawberry yogurt with blueberries and black berries.
-For lunch, orange chicken, with a mound of broccoli
- I had 3 snacks, carrots and ranch, 2 organic fruit leather's, and veggie chips.
-For dinner I ate Chicken with soy sauce and this Maple-Glazed Sweet Potatoes... yum.
The Maple- Glazed Sweet Potatoes are baked for 40 then combined in a deep skillet with bacon (I use turkey bacon), yellow onion (I use red), maple syrup (reduced fat) and thyme leaves... it tastes like Thanksgiving!
-AND THE GRAND FINALE, Mom's Favorite Banana dessert (Which is below) However, I used Dark Chocolate syrup instead.
